Ricotta Frittatas!

1 x 250g tub of ricotta cheese
2 eggs
5 x spoons of flour
2 x spoons of porridge oats

then add what you like e.g. spinach & peas or grated carrot and grated apple.....

Mix well and add dollops to frying pan and fry a couple of mins on each side

Potato Scones:

Mix 450g mashed potato with 50g flour - well

Shape in to a flat circle and cut in to triangles and fry in a dryish frying pan until golden
