help! sugar free pudding recipes or ideas for a diabetic needed please!

a friends parents are diabetics and qutew old, our friend cooks sunday lunch for them but they never eat pudding because he doesn't know what he could make.

nothing to complicated please, nd 'm not sure idf they can have artificial sweetners so a mixture of recipes with or without would be reeeeeeaaaaaaally helpful!

Sugar free rice pudding. 2oz/50g pudding rice plus 1 pint of milk. Squeeze of fresh orange juice and some grated zest to add sweetness, add some nutmet. Bring to boil, simmer for 30 minutes approx (use big pan as it is a pig for boiling over)

Some buckwheat flour instead of part of the normal flour will give sweet taste, just 50 grams can be enough. But be careful, as when added in big amounts it will affect the texture. I used it when making sugar-free bread, so, sorry, don't have a ready pud recipe with it.
Adding pureed raisins, figs, etc can add sweetness to taste too.
Can also suggest making a pancake cake . Bake thin pancakes without sugar or with some buckwheat flour added for sweetness and layer them with any sweet fruit/yogurt/cream mixture.
