Chewy cookies anyone?

Does anyone know how to makae chewy cookies?

I say cookies specifically because I want chewy ones, IMHO biscuits are hard and crunchy, and sadly that's all I ever seem to end up with when I make biscuity/cookie-y recipes. If I wanted a crunchy biscuit I would buy a hobnob. {grin]

i agree, cookies should be chewy in the middle
iirc those tubes you can get from the supermarket with pre made dough are good
but you want a recipe because you're a grown up

I may or may not be a grownup, but those tubes of dough cost as much as just buying cookies from the bakery section, and anyway I wanted to play at baking, and that includes getting flour everywhere.

Also not a recipe but Asda do boxes that you just add water to for 77p, and as they have to be mixed and rolled out you can pretend you are a grown up and baking.
That's waht I do anyway

I think it was pointy's or Chipo's recipe that appealed most to me...

In any case you cook them in batches! They only take 10 mins.

I have a fabbo orange biscuit recipe I think they take 6 minutes and make about 90ish biscuits. It doesn't take too long.

My mother used to make chewy cookies, she said its because she puts icing sugar in, not granulated.

Ooh, I almost feel I should use the h2g2 recipe out of Douglas Adams solidarity.

Although Wikipedia is fo course the real-life Hitchiker's Guide (except without paying people to go to obscure places for 'research').

I've made chipo's recipe - absolutely delicious. Makes about 20 cookies if I remember rightly.

this is a US recipe but it works like a charm (a stick of butter is 4oz)

1.5 sticks unsalted butter, softened
3/4 cup firmly packed brown sugar
2/3 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups rolled oats
1 1/4 cups plain flour
3/4 teaspoon baking powder
3/4 teaspoon bicarbonate of soda
1/4 teaspoon salt
1 1/2 cups raisins

Preheat oven to 190 degrees.
Cream butter & sugars with an electric mixer until light and fluffy. Beat in the egg & vanilla.
Stir together the oats, flour, baking powder, bicarb & salt in another bowl.
Stir the dry ingredients into the batter until just combined, stir in the raisins.
Drop the dough by heaping tablespoons onto 2 large baking sheets, leaving 2 inches between each ball of dough.
Bake until golden brown (about 12 minutes, depending on your oven)
Cool cookies on sheets for 5 minutes then transfer to a rack to cool further.

Take them out VERY promptly! They keep on cooking a bit when they're just out, so at that stage where you'd normally think oh just one more minute, get them out of there!

banana fudge cookies

dangerous business...the recipe makes a lot and they are very moreish.
