Iv made basic fairy cakes today and have made far too much mixture (caster sugar, eggs, flour&butter).
Can I freeze it?

I'd be inclined to bake the cakes, then freeze them cooked - I have done this successfully, but never tried the raw mix.

Will the cakes not be a bit dry when they are defrosted?

SR flour is soon useless once wet. It looses its ability to rise.

mine have been fine - and MIL does this all the time and her cakes are great.

I often freeze cooked cakes, you wouldn't know the difference.

I can't imagine that freezing the mixture would be successful.

Just bake them and eat them.
