Deli-style cupcakes (not fairy cakes, they're dead easy) - what makes them different?

Forgot to mention: I used golden syrup as I didn?t have corn syrup and it was fine.

Off to order some of those lovely little cupcake cases as used on that blog link

I have been watching this thread with interest, then I noticed in the April issue of Delicious, a recipe for Marshmallow Cupcakes.

I have given them a try and they are really nice. Nice and big and the tops of them stay flat so great for a good layer of frosting. The vanilla frosting recipe that came with it was also lovely.

The dc thought I had gone to the shops for them!!

I can post the recipe if anyone is interested.

yes please stirling! I had Delicious last year as a subscription for CHristmas. Not renewed it this as kept all last years and can only keep so many magazines!

Have put a picture on profile - dont think the photo looks as good as they did really - I was impressed!

I use a butter icing where two thirds of the butter is replaced by low fat cream cheese- lower fat than butter cream and much more yummy! Also add a splash of vanilla extract.

Cupcakes

120g Plain Flour
140g caster sugar
1 1/2 tsp baking powder
45g unsalted butter at room temp
120ml whole milk
1 large egg (free range obviously)
1/4 tsp vanilla extract

Put flour, sugar, baking powder, butter and pinch salt in bowl and, using hand held electric mixer on slow, mix till it looks like sand. Gradually pour in half the milk and mix.
In another bowl whisk egg, vanilla and the rest of the milk, then pour into creamed mixture and beat until incorporated ans smooth.
Divide between 12 cupcake cases and bake for 20-25 mins at 180/160 fan/gas4.

Vanilla Frosting

250g icing sugar
80g butter at room temp
25ml whole milk
couple of drops of vanilla extract

Beat icing sugar and butter till it comes together. Turn mixer down to low and mix together the milk and vanilla in another bowl, then add to creamed mixture. Continue beating till light and fluffy.

There is also a recipe for chocolate frosting.

I use a yellow cake recipe for the batter.. and the icing I make is normaly one with butter and creamcheese which has a smooth creamy texture and isn't too sweet..

I made brownie cupcakes the other week but the ones before that are the recipe I use all the time (minus the snowman faces )
