Kitchenaid made sponge cake not spongy!!

Cake made using new K'aid is not very spongy. Just to check that it was not due to some other factor I made another cake with my hand held mixer ie, creaming with mixer and then folding in flour by hand. Second cake was sublime as it usually is.

Although I use the ballon whisk I wonder if I am overmixing with the K'aid?

I don't use the balloon whisk attachment - I use the beater. My cakes are beautifully spongy.

I only use the balloon whisk for cream and egg whites.

ok, so you cream with the flat beater and also incorporate flour with same? about how long would you say you mix flour in for? I have been adding flour and then wondering off to do other stuff and I realise that I'm mixing for longer than when I fold in by hand.
