mascapone, chicken and ?pasta - what can I create?

that's it really - forgot to get anyting out of the freezer. I have a tub of mascapone, some fresh chicken and plenty of veg plus pasta in the cupboard. what can I serve my family

This is one of those threads where the answer is in the question - mascarpone, chicken and pasta sounds like a description of a meal rather than a random list of ingredients

I'm making pasta with mascarpone tonight as it happens.

hat kind of veg have you got? Anything strongly flavoured? Any jars of preserved veg (peppers, artichoke, capers)? Have you a lemon? Do you like anchovies?

I would mix up some tasty, cooked veg with the mascarpone, a little bit of oil (or even better something nice and Italian preserved in oil), a bit of lemon juice. Toss with the pasta, top with parmesan.

Serve with grilled chicken. If you have parsley, lemon and capers you could make a gremolata to make it tasty.

I do have lemon and veg so will do something like you suggested - we're not great caper or anchovy eaters tho... And I have just checked and no parmesan either - but even whizzing the veg into the masacapone is more interesting that I would ahve done, so thank you!
