Is it waxy or floury potatoes for mash?

Floury. And no. Don't think I'd like the mix. Carrot and swede is nice.

I use any that are starting to sprout. I had no idea that there was a best type.

Floury and yes, I've experimented with most root veg mash mixes (I'm so adventurous..). It makes it quite sweet, but nice imo.

Celeriac, parsnip, turnip all nice mashed with potato.

Ok, so another question. Are baking potatoes normally floury?

yes baking potatoes floury and salad potatoes waxy

In general the big ones are floury and the small ones waxy. Maris Piper, King Edwards, 'baking' potatoes and 'white potatoes' all good for mash. Sainsbury's do a variety called Vivaldi which are absolutely fab.
