Domestic goddess failure alert. I forgot the egg from the muffin recipe. They are in the oven now. Will i still get muffins?

I guess it will be more like puffy pastry than muffin. If you think of ingredients in pastry and what goes in a muffin.. Still interesting experiment!

Chalk it down as one of those things and whip up a second batch

If you put baking powder in them they may be ok, don't know what they'll taste like though!

hmm, well the boys are eating them, so that's a success.
they're a bit on the chewy side.
but they'll do.

not clever, have just googled when have run out of eggs! you can also use golden syrup as an egg substitute (and reduce some of the sugar in recipe to stop it being too sweet).

oooh had no idea bananas can work in place of eggs! Combined with the baking powder, pleased it worked out I wonder if that explains why my banana muffins always seem to rise way up higher than my other varieties?
