My egg mayonnaise is missing something...

I am trying to make egg mayonnaise sandwiches for a party that actually taste... I do the pinch of salt and pepper thing but my egg mayo sandwiches always taste so bland compared to other mums!!!

Just wondering if there is a secret ingredient or a better measure of mayonnaise to egg ratio or something...

My aunt suggested a little english mustard would spice it up a bit but that didn't go down to well with OH when consumer testing my egg mayo mix...

My mother puts a little butter on the eggs before the mayo. Not v dietetic but good for flavour.

I suspect other mums are using salad cream not mayo. IME most people do. So their sandwiches should be called egg salad cream but that sound silly.

Would also second the butter idea - is lovely with the mayo and tiny bit of salad cream.

I love egg mayo sarnies, but only when it's salad cream, not mayo. Mayo is extremely bland, especially if it comes out of a jar.

I like salt and lots of freshly ground black pepper on mine.

DP puts very finely chopped pickle gherkin in his but I'm not keen on it. I think its his German blood coming through -the love of pickled things.

Also important is serve at room temperature -theres nothing as tasteless as egg mayo straight from the fridge.

Agree about salad cream! A highly overlooked ingriedient in lots of things imo I use a generous dollop of salad cream and mayonnaise in egg mayo, also tuna mayo and also when I make potato salad too. Mayonaise is nice and creamy but a bit bland on its own.
