ideas for pork fillet please?

have two beautiful packs nut never cooked before, want to do something nice at theweekend

Hi today I just tried something new with Pork fillets and PEACHES, peachy!

On a roasting dish covered the fillets in balsamic vinegar, then added a tin of halved peaches with the juice one stock cube with a little water and 2 sticks of chop celery stuck them in the oven.

Then fried some patatoes until browned on the outside and add them to the tray and left in oven until they were cooked through.

Was tasty and something new for me, the peaches tasted lovely with the pork, and you can vary it I am sure, by adding stuff you may like.

Ok

Cut them up into medallions, pan fry and do a nice creamy garlicy mushroom sauce

or I tend to marinade with chilli, garlic and olive oil and the roast them

Or yummy stuffed - make stuffing from breadcrumbs, onions, apple and parsley, spread all over, roll lengthways like a Swiss roll, tie with string.

Pork with sage and apples?

Thinly sliced pork fillet
15ml Oil
2 cloves garlic, crushed
salt and pepper
50g butter
1 large sliced onion
2 apples - cut into thin wedges - leave skin on
15ml soft, brown sugar
30ml brandy
15ml fresh sage
150ml cream (plain yoghurt with cornfolur)

Combine pork with garlic, oil and seasoning and set aside
Heat pan with butter - add onion and apples - toss well
Stir in sugar and cook until apples are golden and soft
Remove from pan
Reheat pan and brown pork in batches - return to the pan with onion and apple
Add brandy, sage and cream and heat through
Serve with mash or rice
