Vegetable recipes please

I have decided that we need to eat many more vegetables, not just a spoonful on the side of the plate. I was trying to think of vegetable recipes, made (almost) completely of vegetables. ie not just 'vegetarian' sausage rolls or mince.

Anyone got any favourites to share? I got as far a ratatouille and then got stuck.

We are trying to do this too.

We do...
Vegetable Pillau
Vegetable Biryani
Pasta with green beans & garlic
Lots of different veg soups
Stir fry (although I do top this with a piece of salmon if we dont use meat)

Butternut squash risotto...lovely
roast veg lasagne
Roast root veg on rice with a cheese sauce
curry
pasta with homemade tomato sauce with other veg thats left in the fridge
Veg stew and dumplings...great on a cold day

I am veggie and I am struggling to think of things off the top of my head. I used to make a lot of Delia's veggie dishes...I thoroughly recommend her enchiladas and spinach lasagne.

iman bayaldi from sophie conrans book soups and stews - delish

chickpea, spinach +?- bacon stew w tinned tom served w couscous

lentil curry (delia how to cook book 1)

veg chilli

puy lentils with rocket, goats cheese and walnuts (google it)

leek and mushroom risotto
prawn and pea risotto (don't put cheese in)

Which 3 beans? All dried or inc green beans? Also like the idea of the chickpea + spinach thing as masses of swis chard about later in the year(nearly spinach).

Actually I like the look of all of them - lots of googling will have to happen.

Also thought of another one myself: oven roasted vegetables with goats cheese.

Nigella's lentil chilli is good.

Veggie curries are great as you can chuck any combination of vegetables and pulses in.

Root vegetables roasted with spices are lovely.

Lots of soup!

I use the one in Jamie Oliver's book Jamie's Kitchen. Its [http://www.jamieoliver.com/recipes/risotto/roast-squash-sage-chestnut-and-pancetta here]. I normally miss out the chestnuts and forget to buy sage (must grow some of my own really) and, obviously, forget the pancetta. Its a great one to do if entertaining veggie and non veggie people, as you can keep the pancetta to one side and add to the meat eater's plates.
