You can, and it will be fine, but just not as quite as nice, IYSWIM. The real vanilla stuff isn't cheap, though, but I think it's worth it - and a bottle lasts a while.

Thanks Hassled, I have a list of stuff for town tomorrow is all so didn't want to spend anything today if I didn't have to. Will add a bottle to my tomorrow list though as I have some more cream to use up in my BIL's fridge

Vanilla essence is usually a cheap synthetic product that has been no where near the pod. The extract is a alcohol extraction of the pod and is a better quality product. However, the best flavour comes from using the vanilla pod. Waitrose do an excellent fairtrade pod which makes very nice ice cream (I think that vanilla ice cream has to have the black 'bits').

I'm nowhere near a Waitrose unfortunately arabica, but thanks for the info, I'll have a look for some vanilla pods tomorrow while I'm in town though & try them

You're welcome.
Vanilla pods can be reused a few times, just rinse and dry. If you store the used pod in a jar of sugar, you get vanilla sugar for no effort. I hope your ice cream is a success.

vanilla extract is better than vanilla essence

jangly · 23/02/2009 18:47

The real thing can be far too strong. I think extract is best, especially for children's tastes.

It's all for me, obviously
