Has anyone got a good pork and leek stew/casserole recipe?

I have diced pork and lots of leeks that need eating up. I thought I would probably do some kind of casserole or stew, but wanted to try something more exciting than the normal boring meat, veg and stock that I normally do.

Any suggestions?

Could you make it a bit like sweet and sour pork? Haven't got a recipe, but I'm sure there are some on google.

I also make a sausage casserole with leeks and apples, using cider as the juice. It would work well with pork too.

They all sound lovely. Think I will try your idea Cies for tomrrow with my diced pork and the butter bean sausage casserole on Tuesday when dp mum comes. Thanks Davethehairyhandedtrucker. Will let you know how I get on with them.

Cies how do you add the apples to the casserole? Do you just peel, core and quarter them?

I normally cut them smaller than quarters - like diced apple I suppose.
