Pudding Rice - can you freeze?

I made too much pudding rice - does it freeze ok - pity to throw it out?

If it's the same as rice pudding then yes - you just need to add a bit of milk when you heat it up (I always make 2 & freeze one, as the oven is already on)

Did you know you can add dessicated coconut or dried fruit (raisins are a favourite or dried mango)?

My DH doesn't like raisins! I didn't know about the coconut. How much do you add? What other dried fruit could you add apart from raisins and mango?

Apricot is nice, DH & DD didn't like dried pineapple - but tinned & fresh are lovely, cherries go down a storm - anything you fancy really

Coconut - a couple of handfuls in a pint of milk (ish)
