Smokie pancakes!!

A delight available from the But'n'Ben in Auchmithie, should you ever venture into North East Scotland.

For mine, I warm a couple of smokies (but undyed smoked haddock, poached in milk, would be fine too), flake the flesh, and add to a light roux with bay, a glug of cream, and a generous slug of white wine.

Serve with your pancake, a green salad, and a glass of something interesting, utter yum - uncanny in fact, as I made this not three nights ago.
