Pancake day on Tuesday- savoury ideas?

Yay, pancake day on Tuesday!

This year I would like to make a couple of savoury ones (instead of just eating a pile of nutella and ice-cream covered ones like last year... )

Do you have any ideas please? In France I had loads of crepes with savoury fillings but now my mind is blank?

Im sure ham and cheese would work well but would you need like a sauce- otherwise its literally just ham and cheese, a bit dry maybe?

Any ideas gratefully received, thanks!

Mushrooms in cream sauce - yum !
Soak them in milk first - then use the milk to make the sauce & add the mushrooms last. Stir in a bit of cream once at the end !

I do mine with smoked salmon (the hot smoked kind if you can get it), creme fraiche and dill. Think I go the idea off a Waitrose recipe card a few years ago!

I was going to do some sort of cheese and onion concoction with maybe a tomato sauce poured over. Veggies ideas also welcome!

spinach and ricotta pancakes - make the pancakes first, steam the spinach separately and chop/crumble the ricotta into the spinach, then wrap with pancake.

My mum always used to do a kind of bolognaise style pancake. She'd roll them up, sprinkle cheese on top and grill. YUM!

Also good with spinach and cheese sauce.

The classic French pancake filling is cheese, ham and an egg - but not for English style thick pancakes but for the very thin French style ones.

I like them with smoked haddock and spinach inside, put in dish, covered with white or cheese sauce, cheese sprinkled on top and put in oven. Then cook fresh ones for sweet / dessert / pudding/ afters - depending on where you live and how posh you are !

The best savoury pancakes are Breton galettes - made with buckwheat flour.
