something new to do with prawns??

any ideas?

I'll try pretty much anything & can buy bits to go with them if needed.

My oh doesn't fancy a curry or salad so am a bit stuck as we don't buy prawns that often!

oooh, risotto . . . what kind of stock? fish? & would I still use garlic & onions?

stir fry could be a good one as well though

Prawn, pea and ricotta pasta
Ready in 15 minutes
Serves 4

1 red onion, sliced
5 tbsp ricotta
400g raw peeled prawns
50g bag rocket leaves
400g pasta
2 tbsp olive oil
200g fresh or forzen peas
zest and juice of 1 lemon

Cook the pasta in boiling, salted water according to pack instructions. Heat 1 tbsp olive oil in a pan and gently fry the onion for 5 m inutes. Add the peas and prawns and cook for a couple of minutes until the prawns are pink.
Drain the pasta and coat wit the remaining oil, then add the prawns. Stir in the ricotta, lemon zest and juice and rocket. Season with salt and freshly ground black pepper.

It is really delicious but DH would have preferred it without the lemon.

I do prawns and salmon in creme fraiche with chives. If you buy the hot smoked salmon bits, this just means you chuck all the ingredients in a pan together and heat gently. Some peas are nice in it too, and serve with rice or pasta

Does sweet chilli sauce count as curry? In case not, this is easy, quick and yummy:

Cook some rice
Stiry fry whatever veg you have e.g. spring onion, peppers, peas and sweetcorn, add prawns, add 1/4 - 1/3 bottle of sweet chilli sauce, add the cooked rice.

My standard prawn recipe is to fry an onion, garlic, some peppers. Add cream or creme fraiche/sour cream, then the prawns.

Serve over rice.

Dead easy and useful when you've run out of everything else.
