Homemade crisps?

I've been doing these lately and hey are so yummy, does anyone else?

I'm wondering about seasonings, my favourite is just rock salt and a tiny drizzle of vinegar.
For the DC I've tried paprika , and parmesan. I can't think of much else, any ideas?

I tried but mine seemed to go from raw to dark brown and ruined without a nice bit in between. How do you do yours? I was planning to do salt and vinegar because I love kettle chips. I'll have a think about any new flavourings.

I cut them fairly thick and do them in small batches in an inch of oil in a frying pan (obviously with DC well out of the way)

Tere is a point where you think they are not quite done yet, but remember as you take them out and blot them the oil is still cooking them so take them out then.

A friend of ours makes parmesan crisps, which are delicious. All she does is grate parmesan cheese onto a glass oven dish and put it in the oven until the cheese is bubbling then, once it's cooled, she breaks the crispy parmesan into pieces to make parmesan crisps; a healthy alternative to potato crisps! Yummy!

I have made them from beetroot, sweet potato, and parsnip. Never tried parmesan crisps, it sounds lovely.

Are you using smoked paprika or normal paprika? If normal try smoked it is fab.
