Is it possible to make a mousse (or any type of dessert) with diabetic chocolate?

Diabetic friend is coming to stay and I wondered what sweet treats i could make that she would be able to have.

Any advice gratefully received!

I am pretty sure it is as I remember having a diabetic fruit mousse when I was younger (it was disgusting though!). Have you tried looking for a diabetic cookbook at the library?

I haven't tried but a simple idea would be to grate the chocolate over a yoghurt, Muller have a range which is basically that and they taste nice, so I imagine it would work and taste nice.
