My cupcakes always turn out a little on the dry side?

Am i baking them for too long? or using too much flour?

agree add a bit of milk

they are also lighter if you use stork for baking but i personally only ever use real butter as i dont like other fats

My recipes is 100g self-raising flour, about a teaspoon of baking powder, 100g caster sugar, 100g butter and 1-2 eggs depending on whether I bought large or medium that week. Add milk until its at dropping consistency. My housemates also love it when I add a touch of lemon juice as well.

Don't be afraid of undercooking them. As soon as they're a light golden brown whip them out.
