Quick lunch - vegetarian friend visiting

I'm running out of ideas, she have visited me couple of times and stayed for lunch, and every time I've made something with pasta - tomato sauce+herbs or with pesto+tomatoes+mozzarella. Now I want something different but it need to be quite easy and quick. We both have nearly 3yo children, so they will be joining us.
Any ideas?

Quiche and salad is always a good one, just as good served hot as cold. I did one with chestnut mushrooms, broccoli and red onions the other day, 'twas luuuverly.

vegetarian sausages and mash

buy a roll of readyrolled puff pastry (in the chilled section)

top with whatever you fancy:

pesto/tomatoes/cheese/peppers/olives/onion/sweetcorn/tuna (if she eats fish) etc (or whatever the dc will eat too)

cook for 20mins and slice, serve with salad/wedges

you can prepare in the morning (or night before), clingfilm and stick it in the fridge til cooking

Thanks ladies!!! Good ideas, don't know how I couldn't think of some of them! But I guess sometimes is so difficult to think of even the easiest options, especially when everyone in the family loves meat and fish
