Can I just double the ingredients? And if I do, do I put it in the microwave for twice the time?

This makes a 4-portion one in a 1.5l pudding basin - I often halve the quantities and make it in a cereal bowl.

100g SR flour (6 rounded tablespoons)
100g butter or marg (4 rounded tablepoons)
100g sugar (4 rounded tablespoons)
2 eggs, beaten
2 tbsp milk

Cream butter and sugar, add eggs a little at a time with spoonful of flour, beating well. Fold in rest of flour, alternating with milk.
Transfer to 1l (1.5pint) pudding basin, cover with a plate.
Microwave for 4min then leave to stand for 3min.
Turn out onto plate.

You can add raisins, chocolate chips etc, or put a couple of tablespoons of jam, fruit, golden syrup etc at the bottom of the dish before adding the mixture.

Eyeballs, someone on the cake-making site said they made it with coffee in work and it was great.

I made it last night and put the mix in to 4 teacups and added some cunks of choc in the middle, so it was like a pudding with gooey chocolate inside.

Added cream and brandy on top.

Have just made MrsB's syrup version for the DCs tea. They have yet to taste it, but it smelt so eggy when cooking. Wonder if that's normal?

Ceolas · 22/02/2009 17:46

Well I made a bit of an error. Cooked it for 5 mins instead of 4! However it was well received. Sponge was very light despite the syrup being a bit overdone

it does smell much eggier than the smae mix cooked in the oven

never worked out why
