You can make curd cheeses like ricotta by boiling up milk with lemon juice or vinegar then straining it. It's easy and rather fun though it takes masses of milk.

casue it costs the earthe and we love it so

I think it would take a long time and cost far more in milk than the value of the cheese you make.
