Throwing it out drives me bonkers!

Am really tempted to put it in fridge overnight and scramble in the morning, or is that just begging for salmonella?

What do you do with 'em? Surely there are other MNers as tight economical as me?

Dont bother to waste an egg on glazing.

Or, just use the yolk, and whip up a mini meringue with the white.

I'd do as you do phdlife - use it up in a day or so in scrambled eggs or omelette. Can't have it going to waste!

I don't see why you shouldn't fridge it and cook the following day. Especially if the pastry brush has only touched pastry, not raw meat/fish filling. After all, if you make a recipe that calls for only yolks, or only whites, you can cover and fridge the other bits, and use a day or two later.

I haven't killed anyone yet!
