I just roasted a 2.3kg chicken (all so I can make fresh chicken noodle soup which, for some reason , I have been fantasising about all week!), can you give me suggestions what to do with the rest?

I'd thought chicken pie, curry, but anything else you can think of?

I know it's not the usual weather for it, but we often do a chicken salad with bacon, avocado, etc.

Risotto is another one except I guess you're using the stock for soup.

Chicken sandwich.

Chicken salad as Kathy suggests is a good one. Have just posted on another thread easy instructions for a chicken, spinach and feta pie (fold up in fillo pastry, brush with egg, bake).

I also use it for a really substantial pasta sauce - tinned tomatoes, tomato paste, garlic, an onion, courgettes, peppers, frozen spinach, mushrooms and aubergines. Chop chop chop, stick in your bite-sized bits of leftover chicken, add fresh ravioli if you can get it (cooked dried pasta is fine if you can't) and simmer in a casserole dish for a while.

Mmnn, chicken 'goo', which my mum always used to make with leftovers (usually turkey goo at Crimble actually). Chicken, onion, mushrooms, and secret ingredient ..... Campbell's (now Batchelor's) condensed chicken or mushroom soup (depending on whether you want it more chickeny or mushroomy!). I normally make my sauces from scratch, but this is just so nice. Fry onion and mushrooms then add chicken and soup and just dried sage, no other herbs, bit of pepper maybe. Chuck in some frozen peas for a couple of minutes at the end and serve with spaghetti. I've tried to posh it up over the years with fresh stock or different herbs or veg, and it just aint the same. Don't mess with a classic!

Chicken fried rice is lovely (and not actually that unhealthy.) Just rice, peas a little onion, scraps from chicken and soy sauce.

Chicken and sweetcorn mayo with baked potatoes or sandwiches.

Chicken goo sounds amazing - totally forgot about condensed soup. You don't happen to know if it's gluten-free? DP is coeliac (so unfortunately filo pastry is out!)

Just googled - does seem to contain wheat flour - booooooooo! Maybe a gluten-free gloopy soup would do, but myself - as I said, don't mess with a classic

TBH my cheese sauce normally ends up quite gloopy so I might not tell the difference!!
