Apple cake recipe - using normal (not cooking) apples

Have some ropey apples, too far gone for eating but probably fine cooked. Does anyone have a recipe for apple cake using normal apples? All those I can find stipulate cookng apples - I probably need to just use less sugar, but not that great at fiddling with quantities! Thanks

Someone (can't remember who, sorry) suggested Dorset Apple Cake to me ages ago. If you do a search, I'm sure you'll come across it. It was lovely
