Wimpy carnivore, duck giblets?

I like meat, but I'm not very competant as a carnivore. I don't (generally) like offal, but foie gras and pate are generally good. So what do I do with this little bag of ... stuff? I might well make stock with the duck carcass when we're done with it, do I just bung it in with that? Or what?

NQC I would make giblet stock to make the gravy.

If you wanted you could do something fancy with the liver - Nigella minces it and adds to the gravy actually, which I've never done but might be good?

DOn't put the liver in the stock pot: try wrapping it in a bit of streaky bacon and grilling/panfrying it, yum.

Or if you are not keen on offal itself, freeze the liver and use to make pate later.

Clary · 12/02/2009 00:13

wonder if there's enough tho - one duck liver?

solidgoldbullet4myvalentine · 12/02/2009 00:30

Sorry, meant 'till there are more livers or enough other stuff to make pate'.

Clary · 12/02/2009 00:31

yes of course that's the answer.

How often do you have duck NQC?

NotQuiteCockney · 12/02/2009 06:30

I have duck once a month or something, not sure? I love it, everyone else in the family is a bit 'meh'.

I think I'll try frying the liver, I'm training myself into liking things, and duck offal seems like a good start. Not sure I have any bacon in the house, though.

Thanks, guys.

WTF was all that stuff in the bag? I recognised the neck, and the liver ... but there were at least two other small organy sorts of things.

I cooked the liver as recommended, but, well, it tasted like liver. Ah well, I tried.

Prob the heart and hmm not sure what else youget. Stomach of some kind?

NotQuiteCockney · 13/02/2009 10:25

Didn't look like stomach. Heart makes sense, and kidneys maybe? I think birds have kidneys. (I'm pretty sure I didn't get the cloaca, should be happy about that, at least. )

I'm such a wimpy carnivore, I think all those bits should be eaten ... just not by me.
