Any easy receipes for mushroom soup?

Chop a shedload of mushrooms (mixed wild if you can get them) and saute in butter until soft. Add 1pt veg stock & season. Bring to boil and then simmer for about 20 minutes.
Leave to cool (overnight is terrific cos it really gets flavoursome) and then blitz in a blender.
Serve with a swirl of cream or creme freche

I'd echo the one above, but I'd also add a clove or two of garlic, chopped or chrushed, saute along with the mushrooms. Doesn't add to garlicky a flavour, but I think really peps it up.

I agree with the above.

Alternativley, keep some tins of high quality tinned mushroom soup in the cupboard. Stir in garlic puree.

Takes 3 mins.

chopped spring onion is lovely in mushroom soup. Also, I take some of the chopped mushrooms out before blitzing cos I like to have some bits of mushrooms in mine.
