Can I freeze fairy cakes?

Just normal sponge recipe, in little paper cases.

If so, how would you go about defrosting them?

AND, more importantly, can I freeze them with icing on, or would that go horribly wrong?

yes, you can freeze. they might not taste quite so fresh, but will be perfectly fine, just take them out in the morning, and leave covered to defrost (in a tin or similar).
Not sure about the icing, but can't see any reason why no.

Send some over to me, i will check to make sure they are ok before freezing

I don't think you can freeze them with icing on but it's fine to freeze the plain cakes. I imagine that icing them once defrosted would "lift" the flavour better too.

I would send some over, but the post keeps getting delayed by the snow, so they wouldn't be fresh...

Yes you can freeze either plain or iced or with chocolate on or with buttercream in

This isn't a particularly urgent request, I'm baking a coffee adn walnut loaf right now, was just wondering for future marathon baking sessions when I have less free time.
