Apparently according to carb and lobster hunting DH (dives so gets them sometimes), the meat is better when you put them in very cold water then bring it up to the boil. Sounds a bit cruel but he says they just pass out from the heat.

I was unaware he spoke crustacean but there you go, I've learned something.
