Carrot cake

Does anyone have a nice carrot cake recipe?

I think I'm addicted to it. I've been munching on it all week at college, theirs is so light you barely feel as though you're eating anything at all.

I'd appreciate any recipes as it'd be much cheaper to make my own.

And the topping is the best part! Particuarly if it's a cream cheese topping.

I made THIS one this week and it was lovely - didn't last long so must have been good. In this one you soak the dried fruit in the juice and zest of an orange whilst you mix up the rest of the mixture and the orange flavour really comes through.

I have made the delia low fat one and that too is yummy.

And what with all the carrot, dried fruit and orange it is at least 3 of your 5 a day
