add red lentils and baked beans to bulk it out and you get twice as much

and a few dashes of tabasco sauce

My recipe for chilli. You can do it in a slow cooker or on the hob.

1 pack mince (pork/beef) or 1 pack of stewing/braising steak if slow cooking.
1 onion chopped finely
2 tin toms
2 cloves garlic chopped finely
1 small red pepper de seeded and chopped finely
2 teaspoons of chinese 5 spice
1 small cup of strong coffee
1 glass of red wine
tomato puree 1 dessert spoon
1 or two green chillis de seeded and finely chopped.
Salt and pepper to season.
Lentils if you wish to bulk out.

Brown meat, if using mince drain off fat.
Set aside.
In same pan cook onions and garlic on a low heat until just starting to colour.
Add peppers and chillis and cook for a further couple of mins.
Put meat back in pan and add rest of the ingredients.
Cook over a lowish heat for about an hour and a half if using the hob.
Serve with rice and a dollop of creme fraiche.

Add a good dollop of HP sauce when you add the tomatoes - it seems to bring out the flavours. (NB: I normally hate HP but it does work in chilli ).

I find that any bolognaise sauce tastes like chilli con carne if its got kidney beans, chilli flakes and cumin in.

Add a couple of squares of dark chocolate to real rich up the sauce. Loads of cumin and I add a tin of sweet corn too. Serve with gaucamole, sour cream and grated cheese.
