Loaf should sound hollow when you take it out and tap the bottom. If not put it back for a while. Cover with kitchen paper if top browning too much. Don't turn heat down as that seems to make it go heavy.

Oh, and do two small loaves rather than one big one. Will cook through better.

I use a really easy recipie, just mix all the ingedients, knead for 10 minutes, rise (on the range) for 1 hour and bake for 35 minutes. There's a definate pop pop sound when it's cooked.

make sure the dough is good and sticky, almost wet - makes lighter, better bread
