You know how when you throw together a left-overs/store-cupboard meal it can be a bit hit and miss?

Well, I've just had a hit

Had lots of left over veggies from Saturday lunch, and decided that instead of making soup I would do a lentil and veg curry thingy. It was delicious. I only really added a tin of tomatoes and some curry powder, but it's amazing what a difference it made.

Gives me a little glow inside to be so frugal but also to enjoy eating it.

Well done Cies! I am always very of people who can do that! I can't do much without a recipe!

Well done indeed - agree with RobertPattinson - I'm pretty stuck without a recipe. What did you do - fry an onion first and then add the veg, then the curry powder? Did you cook the lentils first separately? How long did you cook it all for?

I fried off an onion, then added some curry powder and a few small dried chillis. Then tipped in a tin of tomatoes, my left over veg (broccoli, carrots, sweetcorn, beans) and some brown lentils (not pre-cooked). Then added some water (double the amount of the volume of lentils) and let it bubble away for about half an hour.

Thanks very much Cies - will give that a go.
