Beetroot - ideas needed urgently

Have got 3 beetroot to use up. Having roast chicken for tea. What can I do with them

roast them in the oven wrapped in foil; it will take a while but worth it.

i chop them into quaters and roast in oven for about 45mins, if i can be arsed i put a small amount of cumin seeds on top. when roasted i add feta cheese.

yep roasted with feta cheese is devine.

Or, cook them by boiling them, peel the skin off and grate, toss with toasted sesame seeds or sunflower seeds and soy sauce, and serve as a starter.
