there was a thread about this before, hang on, i'll find it for you. ps as long as you get the oil hot enough it's quite hard to screw up (famous last words, & i am from yorkshire which is supposed to help ).

Cup of flour, cup of eggs, cup of milk. (Use small cups tho or you will be eating them for weeks). Mix them all together with a pinch of salt.

Make sure the oil/fat is hot and it really helps if tins are burnt and not brand new so they dont stick.

If I can make them they are fool proof!

8oz plain flour
half to three quarters pint of milk
3 eggs plus an extra egg white
whisk together and stick in fridge for at least 30 mins

heat pudding trays with oil in biottom
add batter
cook at about 200 for 20-25 mins
