i have 10 week old and 2.6yr old ds's and really struggling to make quick and easy and healthy meals for tea/ dh isnt around for tea really and just a nightmare. Need some meal ideas that can be turned vegetarian for me and no dairy/egg because of ds1.

this week its all been fozen food although i mean waffles, fish fingers, chips etc. PLEASE help me! My food shopping is really high as im wasting stuff and even though i do a food meal planner i just have no idea what can fit in the above now that i just dont have the time to cook properly. I dont even have time to cook in batch and freeze...

ready made meatballs

on a baking sheet for 20 mins or so until brown

transfer to big pan

add a jar of tomato pasta sauce

add a meat stock cube and some water

simmer for a while

serve with pasta or rice

just seen it needs to be veggie too!!

erm, quorn mince can be made into meatballs?

quorn veggie sausages in the oven until brown with some onions and a bit of stock

transfer to casserole and add baked beans , tinned tomatos, kidney beans and seasoning

cook for an hour or so

Mushrooms, broccoli and spinach with pasta and pesto.
Veg chilli - onions and a chilli, chopped and cooked. Add sliced mushrooms, peppers and courgettes - cook for a couple of minutes. Add tin of kidney beans, tin of tomatoes, some tomato puree and cook for about 40 mins. OK - not too quick cooking time, but sits happily, so you can prepare it whenever you have a minute.

Couscous and roasted veg.

ive always hated casserole and i mean with avengence! Can you give some rough measurements for me so i can try to make a tasty one? I really have never had one i like but i am prepared to try now!

quorn pieces, sweat off some chopped celery and carrot and maybe some boiled potato. make a white sauce with cornflour and milk and a spoon of english mustard. pour into a baking dish and cover with the readymade pastry and bake until golden

i don;t really use measurements, just tins of stuff and season to taste , you can get sachets of sausage casserole seasoning which are ok

also, you can make quorn mince into bolognese or chilli, depending on what you add.
