I would defrost them first, then chuck them in the batter raw, and cook as normal. The cooking time should be enough to cook them properly, I think. Nigel Slater has a nice recipe for this. I can go and find it later, if you want.

Heat the oil to smoking in the oven first. Then stick in the sausages and pour the batter over the top. Straight back in hot oven for say 30 mins.

Are you making one large TITH or little ones?
With cocktail sauages I make TITH in a muffin tin.
If sauasges are defrosted well then they should cook ok in the batter.

I cook the sausages first but not to crispy & then put in a tin with the batter

candyfluff · 28/01/2009 10:31

the sausage are the cook from frozen type so if i put them in for about 10 mins in oil then add the batter and cook for another 20-25 mins will it be ok?

I heat the oil in the tin until nice and hot and then add the sausages for 5 mins on their own - this browns them off nicely and then I add the batter and cook.

I skin the sausages first. Bit if a faff but nicer I think plus my ds can chew them easier. I made a little mini one for him on Monday in a individul metal pie dish. It looked so pretty I wish I'd taken a picture of it!

Poledra · 28/01/2009 10:39

I brown the sausages in the dish with oil first, then pour the batter over them and whack in the oven.
