I know slow cookers have been done to death here, but I'm wondering about puds. Have I imagined it or did someone say you can do a sponge in them? What else have any of you done in them?

I haven't got one, but could you make rice pudding in it?

I've done rice pudding with variations (my favourite is with rose water and cardamom seeds, topped with toasted pistachios). Works beautifully and minimal effort especially for lunch with friends.

I made lemon sponge today. The kids loved it.

Wow lemon sponge sounds great, but rose water and cardmon seeds sounds fabby - do either of you have a recipe?

I just added half a dozen crushed cardamom pods, and a couple of tablespoons of rose water, to a normal rice pudding recipe (having left out the vanilla pods), then add some sliced toasted pistachios to serve. Very fragrant. IIRC I adapted it from a North Indian recipe.

75g soft butter or marg and extra for greasing.
100g light muscovado sugar
finely grated rind of 1 lemon
i large egg, beaten.
50g self-raising
2.5ml baking powder
2.5ml ground cinnamon
50g porridge oats
15ml lemon juice
15-30ml milk

Preheat the slow cooker on high while you make the pudding.

Lightly grease a 600ml pudding basin and put a small disc of non-stick paper in the bottom.

Beat the butter or marg, sugar and lemon rind until light and fluffy. Gradually beat in the egg. Sift in the flour, baking powder and cinnamon over the top and add the oats.

Fold in with a metal spoon, adding the lemon juice and enough milk to make a soft, dropping consistency.

Spoon into the prepared dish and cover securely with buttered foil.

Stand the bowl in the warm slow cooker and pour around sufficient water to come half way up the sides.

Cover and cook on high for 3-4 hours.
