Thinking particularly of stopping it going brown. It will contain melon, strawberries, grapes and poss apple and kiwi.

TIA

Mmmm- it sounds yum. A squeeze or two of lemon juice in the amalgamating juice should stop it going brown. Don't make it too far ahead to prevent mushiness but do allow the different flavours time to come together. Taste wise I like a bit of honey in the juice as well.

Sounds good to me - I was just going to say I like it when it has a mix of colours and a mix of textures (crunch of apple, softer melon etc) and it looks like you have both of those covered.

SM - thanks for the lemon juice trick. I didn't know that!

Put the kiwi in at the last minute as it tends to go slimey!

The amalgamating juice??? Should I be adding something to it, or is this just what will come out of the fruit?

We'll be doing it prob within two hours of serving as we've got no fridge space left.

I've heard of adding sugar, so honey must be similar - will try that as we have a jar somewhere.... [off to hunt]

Thanks for the kiwi tip! Just hope they're not rock hard like the ones I had the other day!

Sorry- amalgamating juice is bit of a poncy way to put it! I usually put a bit of orange, apple or grape juice in with the fruit to keep it moist and juicy. I think it helps the flavour too. I add honey and lemon juice to that,

I think it's better if you DON'T put it in the fridge - the flavours stand out much more at room temperature than if fridge cold.

Right, think I'll be fine with those tips! Wish me luck everyone - it's a buffet for 80-??? people, so it will be good fun!
