I do this:

Slice potatoes thinly and some onions.
Layer in casserole dish.
Layer of smoked fish
Layer of potatoes and onions
Repeat, to end with potatoes on top. (Add ground black pepper and salt to taste.)
Pour over thin cream/1/2cream1/2milk to come up so you can see it.
Bake for an hour or thereabouts.

I would go down the route of an egg/milk/cream mix (a bit like dauphinoise), with lots of parsley and a tad of mustard. O Gord I'm hungrey!
