Shortbread -aaaargh!!!

Trying to make shortbread for burns supper tomorrow but it's turning out rock hard. Am following recipe to the letter. What should I do - cook at lower temp or for less time??

4oz butter
2 oz caster sugar
5 oz plain flour
1oz ground rice
Rool out to 1/2 in thick & cut into rounds
Bake at 150C for at least 30 mins

I use cornflour rather than rice flour, but I don't see that as a problem. Slightly increase the rice flour to plain flour ratio. Try 4oz plain to 2oz rice.

Agree, cold hands, a light touch and test them after 20 minutes.

Here's my best shortbread recipe:

  • Cream together 8oz butter and 4oz caster sugar and
  • work in 8oz plain flour and 4 oz cornflour.
  • Cook on 180F for about 15 mins but check as may need a bit longer
