Vegetable casserole - recipe ideas please

Particularly around what sort of stock/gravy/sauce it should be cooked in, and what sort of beans/pulses work best.

Sadly I have no butternut squash so any recipe that includes it as a main ingredient is out.

Any suggestions please? Thank you!

Knorr?s stock is great for veggies dishes.

I do a spicy butterbean and chickpea casserole with tomato based sauce. Quite filling and nice
Fry a chopped onion until golden, half stick celery chopped finely into the same pan. Then I add whatever veggies I have - chopped mushrooms, chopped carrot etc - and give them a quick whirl in the same pan.
I transfer that to my casserole dish or crockpot (I am a slow cooker fan) chuck on a tin of chopped toms, tins of the chickpea and butterbean, season and spice, top with enough stock to cover without swamping. Cook all day on medium in the slow cooker or low in the oven for several hours.
The seasoning depends on how spicy you like it - Moroccan spices are nice occasionally pop a few dried apricots in - I experiment depending on the veg.

Sorry - but vague recipe but depends what ingredients you have in the house. Veggie casserole just needs loads of veg, stock and some consideration how you will add a little extra seasoning and flavour to the sauce and possiboly thicken it.

Have you got specific ingredients to mind?

Mmm dumplings, good idea and they will thicken it.

I am a big slow cooker fan too - bought a recipe book but was disappointed with the lack of vegetarian options. We are not veggies but I do try to do at least 2 meals a week without meat (and they are getting very bored of risotto!)

I have:
Potatoes
Carrots
Swede
Mushrooms
Onions
Leeks

DH&DS1 don't like parsnips.
I really dislike anything celery related.

Have a variety of tinned beans/pulses and loads of lentils.

Lemontart, what sort of spices would you include to make it interesting but not too hot (DCs 3&5)? Cumin/coriander/turmeric types?
