How to spice up pork loin?

Haven't got much in the fridge, but have pork chops and was going to make apple mash. How can I spice up the pork though? I have (of the top of my head):

honey
various dried herbs
mustard powder

Hmmm, not much else, though will probably pop to the shop to get some veg, but don't have much money to spend. How can I spice up the pork?

What I did the other day which went down a treat was
Fry the chops, season and at the end add apple juice to the pan and reduce, sometimes I add five spice as well, if I have it. I also added some baby spinach leaves at the end, so they just wilted in the heat of the pan.
Also saute some slices of apple and serve on top of the chops.
