I saw Blossomhill mention this recipe in another thread and wondered if anyone had it and if so would you mind posting it for me as it sounds lovely!

Tomato Base Sauce

Serves 5

Ingredients

Olive oil.
1 onion, chopped.
2 red peppers, chopped
2 courgettes, washed and grated.
2 carrots, washed and grated.
1 butternut squash, washed and chopped.
Pinch oregano.
1 bay leaf.
2-3 quality tins of tomatoes

This is one of the recipes featured in Jamie's School Dinners, adapted for cooking at home.

Method

Fry the onions and the rest of the vegetables over a low heat in a large saucepan for 10 minutes. Add the oregano, bay leaves and the tomatoes and season with salt and pepper. Simmer for 30 minutes to an hour. Blitz to a puree with a hand-blender or processor.

Very Veggie

I butternut squash (peeled and grated)
3 courgettes (grated)
3 carrots (grated)
2 red peppers (chopped)
3 small onions (chopped)
6 cans of chopped tomatoes
2 bay leaves
large pinch oregano

Put enough olive oil in a LARGE pan to cover the bottom. Put in all the veg and fry gently for 5 to 10 mins. Add the herbs and tomatoes and simmer for 30 mins. Season. Use hand-held blender to whizz it up.

I used the food processor for the grating and chopping. It looks like a mountain of veg and you need a large pan but it does cook down quite a bit. Blitz it in batches or your kitchen will resemble a scene from a horror movie!!

Can use as a sauce or pizza topping and it is fab. Five pints in freezer to see us through Easter.

Made this yesterday (the larger quantity) and is is yummy! . Can definitely recommend. Did have to make it in two pans though due to sheer volume. Dh managed to blend it with handblender with minimal mess too.

would you need to grate it if you're going to blitz it with the blender anyway?
(hates grating veggies as think is a big faff )
