Never cooked Roast Pork before. Help Needed Please.

Hi,

I am doing roast pork for Sunday lunch and really don't have much idea how to cook it.

Any advise please?

You need to score and salt the rind so that it bubbles up and crackles.

Oven has to be very hot for first 30 to 40 mins for said crackling then lowered to average roasting temp for remainder of cooking time. I think cooking time is approx 60 mins per kilogram.

It needs to "rest" for a good 15 mins when it comes out of the oven before you slice it.

I cook a roast every Sunday for parents and us 5 but never pork.

I have a pair of meat scissors - but you could use a knife. and about an hour before it's due out, I cut the fat off and put it by the side of the joint in the roasting pan (mines on a rack though)and it really does make the crispest crackling ever!
