Would a roast veg sarnie or wrap be nice? (and what with?)

Have loads of carrots, parsnips, etc in the fridge and was pondering over roasting them, then having in some kind or sandwich or wrap

Will it be nice or ick do you think? And what should I put with it, mayo maybe? Bit of cheese?

A wrap with sour cream or goat's cheese - feta maybe - sounds yummy

perhaps a bit rooty for a really nice wrap? Could you make them into a soup instead?

yes, I think it would be yum. With feta or maybe some bacon, you need something sharp because the veg is quite sweet.

think roast tomatoes aubergines, courgettes etc is lovely in wrap/sarnie but not sure about a carrot & parsnip dominated one, tbh.
