Leftover roast ptotatoes

Do you think some potatoes leftover orm Sunday lunch woudl be OK recycled tonight? Was planning to crush them up a bit and stick them in the oven with some onion and cheese. Or do you think it's too late?

we do this regularly, they'll be fine tonight if they've been in the fridge since Sunday.
