how do you cooks yours?

I think the last time I marinated it in some soy and honey and then roasted.

i managed to feed four from one tenderloin.

pork schnitzel
cut into four chunks, bashed within an inch of its life till wafer thin.
dipped in beaten egg/breadcrumbs and fried.
mash and greens
yum yum

Sliced into medallions, then panfried, served on a bed of tagliatelle with a creamy mushroom and madiera sauce and tenderstem brocoli.

onion, mushrooms, grainy mustard, creme fraiche and a dash of wine. Serve with rice.

Slice it almost in half lengthways (but don't cut fully through the meat). Cover it with clingfilm and bash it with a rolling pin to flatten it a bit.

Finely chop some garlic, sundried tomatoes and cooked spinach (drained cooked frozen spinach would be perfect), shred the zest of a lemon or a lime and mix the lot up together and spread on to the cut side of the meat. Season with salt and pepper and any herbs that you like. Squeeze over the juice of the lemon or lime that you've used, then roll up like a long sausage.

Wrap in foil and roast in a hot oven for about 20-30 minutes. Take it out of the oven about 10 minutes before you want to serve it, then slice and serve with whatever veg you wish, and some creamy mash.

Think i am going for ComeOVeneer's suggestion. Dont have anything else in apart from the pork and some mushrooms.

I bought one the other week and marinated it for a while in a mixture of grated ginger, garlic and soy sauce and then roasted it and it was lovely - served it with fried rice and even the dc loved it!!

I rub jerk seasoning on then grill, serve it with rice and veg...

2tbsp maple syrup
1 tbsp soy sauce
sprig fresh finely chopped rosemary - mix with pork
heat frying pan decent heat, put pork in with all the above.
sear until nicely coloured
finish in oven
add small apple juice to pan stickiness and use this as a jus
new potatoes and broccoli
superb and very low fat
